The El Carmen Estate is located in the Apaneca-Ilamatepec mountain range and managed with scrupulous attention to detail, with great emphasis placed on maintaining the identity of each lot. Only the ripest cherries are picked, before being washed with spring water and sun-dried on clay patios. The coffee is then stored in parchment in wooden silos and left to rest for a minimum of 60 days under controlled conditions to reach uniform humidity and colour.
