The El Carmen Estate is located in the Apaneca-Ilamatepec mountain range, one of Central America's prime specialty coffee producing areas. As a well-run specialty estate, it is managed with scrupulous attention to detail, with great emphasis placed on maintaining the identity of each lot.
This particular lot has been fermented for between 96 - 120 hours before being dried on African beds, allowing for an interesting flavour profile.
