ABOUT THE PRODUCERS:
Jairo Arcila, Colombia: This 100% Castillo microlot was grown by Jairo Arcila at Finca Santa Mónica. The cherries underwent a 72-hour dry anaerobic fermentation with the pulp on, infused with cinnamon sticks, then pulped and dried on raised beds.
El Chollo, Honduras: Located at 1,450 masl in Quilaperque, La Paz, Finca El Chollo is part of a five-generation coffee legacy led by Carlos Mejia, also known as Chollo. His 17-hectare farm produces around 400 bags annually, with a strong focus on selective picking and quality control. This lot is honey processed and traditionally sun-dried across 10 hectares of drying patios, preserving sweetness and clarity in the cup.
